這款酒以花巴最擅長的「水酛」仕込。水酛是室町時代奈良正暦寺開發的古法,以生米和熟飯一同浸在水裏,透過乳酸菌和酵母,於20-30度的溫暖環境下釀造,形成高乳酸感。此酒更全量使用藏付酵母,形成獨特高酸度特質,令人一試難忘。如果你是崇尚自然派紅酒的酒友,或是喜歡重口味的飲家,花巴的水酛清酒可說是必試!

美吉野酒造長期深耕於奈良的吉野山,最獨特的理念就是「緊貼吉野酸味」——徹底解放酸味,強調酸味與旨味共鳴的酒造哲學。酒造運用「山廢、速醸、水酛等」多元古法發酵,而且緊持只選用奈良的米,配合酒藏周圍的「藏付酵母」,務求讓原始土地、米的味道忠實呈現。
