Brewery Introduction
Akishika Shuzo in Osaka centers on toji Hiroaki Oku's motto: "Taste sake without prejudice." The brewery adopts all-junmai ideology and all sakes are matured for 2 years on average. It even cultivates its own rice using pesticide-free farming. Akishika employs traditional kimoto and yamahai techniques alongside local soft water, crafting robust and high-acid sakes. Rich in umami, the sakes are recommended for further ageing to achieve more elegance.
