Brewery Introduction

Ilaka refers to Japanese traditional roof tiles. The brewery revived in 2024 in Nagano as Japan's newest sake brewery. Its toji Katsumi Tanaka, former toji of Daishinshu, believes water is sake's lifeblood. Thus, Ilaka sources ultra-soft water with just 8ppm minerals. It mandates rice from within 30 kilometers to capture Nagano's essence in natural brews. These create crystal clarity and layered fruit aromas without monotony. Truly a must-try for sake lovers.
