About the brewery

Yucho Shuzo sits in Nara Prefecture's Gose, widely known as the birthplace of Japanese sake. With its iconic Kaze no Mori brand, it sets the standard for freshness in sake brewing. The brewery employs bodaimoto methods and 100% Nara rice like Akitsuho and Tsuyu no Kaze, paired with Katsuragi Mountain's ultra-hard water, yielding Nara-style sakes of rich, ever-shifting layers. All Kaze no Mori sakes emerge as unfiltered namagenshu, monitored by scientific instruments under strict low temperatures to preserve natural micro-bubbles.
