About the brewery
Aoi Shuzo in Niigata's Nagaoka originally operated as Takahashi Shuzo, until a passionate new team took over and rebranded it in 2024. The brewery serves as both brewer and farmer, committing to high polishing ratios for complexity. It divides its lineup into Domaine Aoi, capturing local Nagaoka terroir, and Maison Aoi, showcasing premium rice from across Japan.
