澤屋松本的「守破離」系列是近年備受矚目的旗艦系列，名稱取自傳統劍道文化：守即遵守、破即突破、離即超越，代表酒藏需傳承傳統技藝，打破既有框架，再超越自我革新突破，是能夠表達日本職人精神的意念。此酒以最高級的「兵庫縣特上愛山」作酒米，釀好後才熟成2個月才入瓶，保留氣泡感的同時也令層次更豐厚。

開栓時會有清脆「卜」的一聲，入口能感受到優雅的蜜瓜、洋梨與白桃等吟釀香氣，帶有微碳酸感，酒體清爽醇滑而帶微酸，並以愛山常見的小量澀感作結。每喝一口，味道間又會有小量變化，酒體亦會慢慢變得更圓潤醇厚，是一款非常典型的「愛山」風格作品。此酒適合5-10冷凍單飲，或配搭海鮮、刺身、壽司等味道較輕盈的料理一同享用。

松本酒造位於京都府伏見區。伏見自古就以非常優質的地下水見稱，而酒造目標是釀造究極的食中酒，為了達成這一目標，信守「技術無有能超越原料」：把酒米原料視為釀酒最重要的一環，只選用兵庫山田錦及愛山，以及富山砺波市五百万石等，甚至於2018年，開發了「精米藏」自行精米，務求每款清酒都能與食物達成最完美的契合。
