It aims to craft the ultimate mealtime sake, guided by the belief that no technique can surpass superior ingredients. Sawaya Matsumoto selects only premium rice like Hyogo Yamada Nishiki, Hyogo Aiyama and Toyama Gohyakumangoku. In 2018 it built an in-house polishing facility, ensuring every sake achieves perfect harmony with food.
