About the brewery
Koshimeijo was founded in 1845 in Niigata Prefecture’s Nagaoka. The brewery benefits from the region’s heavy snowfall and pure subsoil water from Mount Morimori. It follows an “ultimate subtraction” philosophy, avoiding flashy ginjo aromas or sweetness. Instead, Koshimeijo employs traditional kimoto methods to gently draw out pure rice fragrance and water sweetness, achieving a refined minimalist beauty in sake. Its Yamashiroya brand has recently earned glowing reviews in contemporary sake.
