About the brewery
Hayashi Honten resides in Kakamigahara in Gifu Prefecture. The Hyakujuro brand draws inspiration from kabuki actor Ichikawa Hyakujuro's gift of 1,200 cherry trees, which birthed the renowned 'Hyakujuro Sakura' grove. It embodies the brewery's vision to craft sakes ideal for savoring amid blooming cherries. Surrounded by the Nagara River, one of the clearest streams in Japan, the brewery naturally employs the river's ultra-soft water. By incorporating lactic acid-free fermentation, Hayashi Honten enriches its layers for a profound depth.
