Except for Yamada Nishiki, the brewery sources all rice from Gifu and uses water beneath Tengu Mountain along with the region's climate. Minotengu delivers robust body and rich umami, capturing Gifu's distinctive essence. Unlike the coastal Japan, Gifu favors bold flavors such as Hida beef and hoba miso. As an ideal mealtime sake, it pairs flawlessly with braised or soy-based dishes.
