Kitanishi Sake Brewery was founded in 1894 in Ageo, Saitama. It first gained recognition with its rich, warming sake Bunraku. In 2018 the 5th owner launched Sara after five years of dedicated development. Named to honour Saitama as the “Land of Colours,” it blends multiple yeasts in precise ratios rather than using one single strain. The result is delicate ginjo aroma with perfectly balanced sweetness and acidity, making Sara a fast-rising favourite.
