Brewery Introduction
Isojiman Shuzo from Shizuoka began sake brewing in 1830. As one of the members of Yamada Nishiki project "Frontier Tojo 21", Isojiman is the pioneer of modern ginjo style sake. By emphasizing the process of koji making, it extends the time for creating koji beyond the usual 48-hour practice. It takes even up to 80 hours when it comes to daiginjo series, and hence creates the brewery's signature crisp and aromatic profile.
