Brewery Introduction

Mitobe Shuzo has been crafting sake in Yamagata Prefecture since 1898. The brewery grows its own rice including Dewa Sansan and Kame no O for their Yamagata Masamune series, and is one of a few sake breweries to use hard water. Aiming to become the chosen sake for Ginza sushi bars, it blends home-grown rice with premium Yamada Nishiki and Omachi. The sake delivers a sharp, sword-like finish and has won multiple international awards.
