「獺祭二割三分仕込梅酒」是獺祭在日本梅酒研究會的建議下，以華麗的「二割三分純米大吟釀」為基底，只選取每粒米最精華的23%部分，配以和歌山最高品質的熟成南高梅，經過一年時間浸泡而開發完成。此作從研發階段開始反覆試驗，歷時3年才推出，是每年一回限定推出的逸品，有「究極梅酒」的美稱。

此作開瓶便洋溢著滿滿的梅子香氣，伴隨著「二割三分純米大吟釀」華麗的吟釀香氣，果香撲鼻，入口梅子酸味清新而優雅，與清酒完美襯托出豐富分明的香氣，酒體濃密香醇，口感順滑，加上只有8%的酒精濃度，爽口怡人，令人百喝不膩。適合單飲或配搭水果類甜品，也適合加冰或梳打水享用，享受餐後悠然舒適的時光。

位於山口縣、釀造世界知名人氣銘柄「獺祭」的「旭酒造株式會社」創立於1948年，釀造作品全部均為純米大吟釀。巧妙地融合機械與人手作業的優點，使酒造的釀造技術層出不窮，不但每款作品都可以帶給品飲者不同的口感體驗，酒的質地亦非常乾淨易入口，令「獺祭」在推出不久，便成為世界各地的酒迷們所追捧及愛戴的清酒銘柄之一。
