Brewery Introduction
Hatsukame Brewery in Shizuoka, founded in 1636, stands as one of Japan's oldest sake producers. It primarily uses two late-harvest rices: Shizuoka Homare Fuji and Hyogo's premium Tojo Yamada Nishiki. Both rice types feature large shinpaku for easy dissolution, ideal for daiginjo. Hatsukame employs snowmelt water from the Southern Alps, yielding sakes with sweet, cool clarity and subtle minerality. Its Daiginjo Ai was Japan's first daiginjo dating back to 1967, profoundly advancing the ginjo market.
