飛良泉一向以山廢技法製作旨口濃醇的清酒，近年則開發了「飛囀」企劃，以山廢技法釀造更具現代感的新派清酒。這款「雛」製法上有不少獨特之處：先是運用了「77號酵母」，亦即蘋果酸酵母，令清酒酸度明亮鮮活，其次以山廢酒母於低溫環境下發酵，令酒體比其他酒體來得更輕盈，加上12度低酒精原酒，為飲家帶來截然不同的山廢體驗。

入口帶有明亮清晰的柑橘、青檸、青蘋果等酸味水果的香氣，酒體輕盈通透，口感順滑，收結帶點礦物平衡酸甜感，乾淨俐落，整體感覺簡單直接，是一款可輕鬆暢飲的新派清酒。適合5-10度冷飲，以酸汁作為搭餐思路，配搭薯仔沙律、生蠔及日式洋食等料理享用。

酒藏介紹

飛良泉本舖創業於室町時代1487年，是東北最古酒藏，也是全日本現存最早的第3間酒藏。酒藏位於著名的鳥海山附近，擅長「山廢」酒母仕込，結合酒藏身處嚴寒的環境，因此專門釀出帶有婉約清爽乳酸感的優雅山廢酒。近年新推出「飛囀」，專門以山廢配合白麴、自社高酸酵母等獨特技法釀酒，於海外聲名大噪。
