「水端」是由釀造人氣清酒「風之森」的「油長酒造」推出的另一話題系列作品，系列的釀造概念是融合歷史與創新，並將古典工藝重新賦予現代意義。「水端」誕生於享保年間（1700年代初期）建造的「享保藏」，這座酒藏曾沉寂近百年，直到2021年經全面改造後，成為「油長酒造」專屬的獨立甕仕釀酒藏，用來釀製記載於古典文獻中的「時光之酒」。作品「1355」依據古籍「御酒之日記」中所記載的「菩提泉」釀造方法，採用「大甕古法」，全程以大甕進行釀造並貯藏酒液，以已失傳的「夏季高溫釀造技術」釀造，因釀造過程中不使用冷卻設備，全程依賴自然氣候，打造出的酒每年風味各異，絕對值得一試。因應2024年的異常酷暑，酒造特地延後了「1355」的釀製時程，此舉使酒體的糖化效果更加明顯，產生出濃厚的米香與自然甜味，亦為作品帶來了層次豐富的酸度與香氣。開瓶時清酒的香氣中散發出糯米般柔和香氣與淡淡的果實香，入口口感豐富飽滿，層次鮮明，悠長的餘韻中帶有淡雅的酸度，實是令人回味。適合冷飲，配搭壽司、刺身、豆腐鍋物、燒鰻魚、燉菜、壽喜燒等一同享用。
