Koueigiku Shuzo in Saga was once shuttered in 2006, but was amazingly revived in 2019 under Kikudaka toji Katsumi Yamamoto and two TV partners. Designed with crescent moon label, the new Koueigiku focuses on natural lactic acid fermentation without sokujo yeasts, producing mostly low-alcohol modern sakes. The sakes burst with exotic flair, blending juicy citrus and muscat grape notes for a vibrant sip. Perfect for those seeking fresh, dynamic elegance with subtle tweaks in each bottle.
