Brewery Introduction
Based in Kyoto's Fushimi district, Nichi Nichi Jozo is led by renowned sake master Mr. Matsumoto Hidehiko. He spent ten years in intense training at Kamoshibito Kuheiji of Banjo Shuzo and built his name at Sawaya Matsumoto. In 2020 he launched Nichi Nichi, which means "Day Day", inspired by the Zen quote "every day is a good day". Using Fushimi's long-known soft water and mainly kimoto method with lower alcohol, its refined character has made it a sake supernova in just a few years.
