Noguchi Naohiko Sake Institute was founded by Japan’s legendary toji Naohiko Noguchi, the foremost pioneer of ginjo sake and the revival of yamahai. At the age of 90 with countless gold-award sakes to his name, he received the highest brewing honour from the Ministry of Health, Labour and Welfare. After retiring twice, he returned to establish the institute, where his relentless pursuit of excellence continues to earn social admiration.
