Brewery Introduction
Akita Jozo was founded in 1919 after World War I, aiming to craft crisp sakes where rice's fresh umami gently lingers on the tongue like a snowflake melting. This inspired the name Yuki no Bijin, meaning "Snow Beauty". Founder Koichi Kobayashi discovered No. 6 yeast in 1930 at Aramasa Brewery, and Yuki no Bijin now features many brews with it. The brewery upholds Akita's low-temperature long fermentation at 6-12°C for over 25 days, using soft water from Mount Taihei for pure, impurity-free quality.
