Founded in 1927 in Yamaguchi, Shintani Shuzo is now run solely by the Shintani couple. After a 2017 warehouse collapse nearly shuttered operations, a new facility rose, with wife Fumiko Shintani stepping in as toji. The sakes are named after flowers, emphasizing fresh fruit aromas and light textures. Consecutive gold medalists at IWC Sake and Kura Master in recent years.
