此清酒是一款使用傳統的「生酛」方法釀製,冷暖皆可享用的食中酒。酒藏使用了「滋賀渡船」作為原料米,以古老的釀造方法「生酛造り」釀製而成。「滋賀渡船」是「酒米之王」山田錦的父系米種,曾因難於栽種而一度停產的夢幻米。

使用了生酛釀造法釀製的清酒,口感順滑,帶有濃厚乳酸感。加上「鈴鹿山脈」的伏流水帶出米旨香味,釀造後的熟成令清酒顏色呈淡黃,冷飲口感乾爽輕盈。隨著飲用溫度上升,酒粕柔和的米香在口中散開,口感變得更順滑!尾韻利落乾淨,盡顯生酛酒的層次感。此酒的飲用溫度多變,請各位朋友可以考慮自己喜歡的享用溫度,一邊嘗試配塔不同料理食材啊!

比起追求創新,「北島酒造」更傾向傳統,因此它們以清酒釀造的原點「生酛釀造」為中心,務求釀造出理想中冷暖皆可享用的食中酒。「生酛」釀造方法只會在每年寒冷的10月至4月進行,而且相比於現時流行的「速釀法」,「生酛」需多兩倍時間,流程亦更難掌控,是需要高技術的釀造手法。品嚐時不妨慢慢細味匠人的心思。
