法國的Dom Pérignon香檳前首席釀酒師Richard Geoffroy，在告別了工作達28年的Moët & Chandon後，宣佈在日本的富山縣成立「白岩酒造」，並開始展開其全新對味覺追求的計劃，就是釀製日本清酒！消息一出，立即引起全酒界的注目！而首款釀造的清酒被命名為「岩 IWA 5」。

Richard Geoffroy在釀造「岩 IWA 5」的過程中發揮了其最擅長的混酒藝術(Art of Blending)，使用了三款米種 (分別為山田錦、雄町和五百万石)及五款酵母。入口時會感到優美的酸度，酒體口感非常圓潤，味道清新如柑橘，甜味如蜜糖，尾段帶一點點的辛口，感覺既溫柔且紮實。

值得一提的是那由著名設計師Marc Newson 所設計的酒樽。它的線條非常漂亮，混合清澈玻璃與磨砂玻璃的設計令它帶來的相當的質感。而樽蓋採用了玻璃製作，在開起來的時候會更容易。其標籤則由中島秀樹與書法家木下幸子共同創作，可說是一份融合東方與西方文化技術的結晶品。
