Brewery Introduction
Senkin Shuzo was founded in 1806 in Tochigi. The name Senkin evokes the sacred crane serving the gods. Deeply rooted in tradition and natural methods, Senkin launched its main Edo Kaeri series in 2025. This series revives the pure kimoto brewing of the Edo period, using no added yeast and only estate-grown Domaine varieties of Kame no O, Yamada Nishiki and Omachi.The sake is aromatic with vibrant fruit, deep rice umami and silky lactic softness.
